Poulet Rôti

The night before a public holiday always calls for something celebratory. This past EKKA Eve — Tuesday 12 August — we served a true French classic: poulet rôti.

A familiar sight in the bustling bistros and markets of Paris, our version featured roast chicken with crisp golden skin and tender, succulent flesh, served alongside bronzed potatoes, savoury jus, housemade mustard, and a simple side salad.

Guests enjoyed it with a glass of 2023 A. Rodda Baxendale Chardonnay from the Whitlands in north-eastern Victoria — light, bright yellow, with smoky, toasty barrel notes and a lift of grapefruit aroma.

Tarte tatin was the perfect finish — a sweet way to make the most of the holiday eve.
